I know I may sound like the mean mom but with our venture in school we can be sick and still do our work. Emily is currently not feeling well and has been running a fever but we are still doing school work. We are behind a bit because we did not get our books and computer on time. so we need to catch up a bit. Currently today she has to online lessons with her teachers and she enjoys that because she gets to talk to her classmates a bit. Have I said I really like this new way of school!!!! If you are able as a parent I think we should all do this!
This life can get crazy for most. I love the craziness of it all. Never a dull moment here. I am a Stay at home mom of two children and have an amazing Husband! We have 5 American Bullies and LOVE them all!!! You will see pictures of them from time to time. I have fibromyalgia and so that makes this crazy even more crazy! We have started on a journey of Health and Wellness and it has totally changed our lives.

Chicken Spaghetti Recipe
4- Chicken breasts cooked and chopped or shredded
1- Pkg of thin spaghetti
1- can of Cream of Mushroom Soup
1- can of Cream of Chicken Soup
1/2 small onion chopped
1/2 pound of velveeta
1/2 stick of butter
little garlic powder and onion salt to taste
Many people do Chicken Spaghetti so many different ways. My own recipe has become a bit different from my moms original recipe.
Boil your chicken breast until done in either chicken broth or just plain water. Set aside the breasts to cool so you can chop or shred them. Shredding is my preference. In the water you cooked the chicken add your noodles and cook them till tender, drain and set aside. Once they are done add your 2 cans of soup and chicken back into the pot, adding a can of water with each can added. Cube up your Velveeta and add a little at a time to get it melted. Cook on low to let mix. While this is cooking you need to take a 1/2 stick of butter and saute your onions. Once onions are tender add them and the butter straight into the mix. Once everything is mixed well and the Velveeta is melted add back in your noodles. Stir them in well and let warm for a few mins. I always add a bit of Garlic Powder and Onion Salt to my recipe but it is just done by eye not measured.

New chapter in Life
This week started a new chapter in my families life. We took our daughter out of a brick and mortar public school and put her in an online public school. I did this because I wanted to make sure she was getting all she needed from her school. Emily was being bullied in her class and though I loved her teacher/school I did not see any changes coming. I think she will be more happy learning the way she is now. We are also in the process of moving from the city to the country. It will be a shock for us all but a great one too. downsizing in life and simplifying. I think we will either kill each other or grow closer as a family. I plan on writing everyday on how our journey is going.
It is currently snowing outside right now. I love this because I can sit at my desk and not have to worry about school closing and such. LOL All I am worried about at the moment is how Emily is going to do her work since her supplies have been delayed do to weather related issues and I have no idea where or when they are going to show up. Neither does UPS.
We will see tomorrow. Be blessed have a great day!
