If you are like me when you are feeling down you want something comforting. Today was that day for me so I decided to make potato soup. After looking through MANY recipes I just decided to make my own.
1 can of cream of Chicken
16 ounces of Chicken stock
1/2 a package of cream cheese
3 lg potatoes
garlic and onion to taste
Bacon 6 strips crispy
3 green onions
Add your can of cream of chicken and chicken stock into a big pot. Peel and cut your potatoes into cubes and add to pot along with seasoning. Let this cook on med till potatoes are almost soft, occasionally stirring. Then add your cream cheese. Let that melt all the way.
While this is cooking cut up your green onions and crumble your bacon. I add half to the soup and save the other half for garnish. I like lots of bacon :).
You can add shredded cheese to this if you like after it is all done but it is not a must. Loved this!!!

We have 5 American Bullies and LOVE them all!!! You will see pictures of them from time to time. I have fibromyalgia and so that makes this crazy even more crazy! Bacon Wrapped Stuffed Pork Chops
Bacon Wrapped Stuffed Pork Chops
Ingredients:
Boneless Porkchops
Thick Cut Bacon (you can use Peppered)
Cream Cheese
Jalapeno (i use pickled)
Asparagus
Onion
You are going to take your cream cheese and mix it with your jalapenos. 1 pkg of cream cheese is enough for 4 chops. I add 2 tbl spoons of jalapenos and 1 spoonful of juice
Cut onions into Strips
Take the pork chops and hammer them out until they are very thin. Once done spread the cream cheese mix on the pork chop. Take your onion and add a few strips. Next add your asparagus. I put two stems in each chop. Cut them down to fit. I add a little bit of Garlic salt sometimes. Roll up the pork chop. Take the bacon and wrap everything up.
I added Parsley to the top of them and added what was left over of the Onion and Asparagus
You can now put them right in the oven at 350 degrees for 60 to 90 mins and they will look likie this when they come out.
You can also take them out to the Grill and cook them that way for a few then put them in the oven. I like to grill them so the bacon is crispy ;)

Lemongrass & Rosemary Vinaigrette
Directions:
Add all ingredients to a jar, close lid,
and shake thoroughly to mix.
Serves about 8 people with 2 tablespoons
each.
Approximately 72 calories per serving and
7 grams of fat. If you want to cut down on the fat content, reduce the
amount of olive oil.
I am actually going to try this as a marinade for some chicken instead of a salad dressing.

DORSEY TACO STEW
This recipe is a mix of several different friends recipes. I had to play around with it till it was mine and perfect. I'm not saying that theirs were not good it always seemed like it needed something else.
Dorsey Taco Stew
Ground Beef I did 3 pounds (I like mine meaty) browned
3 -1oz packages of Ranch dressing
2 -1oz packages of taco seasoning
2 -15oz cans of corn
2 -15oz cans of rotel
2- 15oz cans of ranch style beans
1 -28oz can of tomato sauce
1 -small onion diced
I add water after all this is done just to thin it out a bit.
Add all ingredients to a pot and let it cook for about 15 mins on a low simmer.
